How to Make the Perfect Kolokithokeftedes Greek Courgette Balls
What are Kolokithokeftedes?
Kolokithokeftedes, or Greek zucchini fritters, are a delicious and versatile dish that is perfect for any occasion. Made with fresh zucchini, feta cheese, and a variety of herbs and spices, these fritters are crispy on the outside and tender on the inside.
Ingredients:
- 2 pounds large zucchini
- 1/2 cup chopped onion
- 1/2 cup chopped fresh parsley
- 1/2 cup chopped fresh mint
- 1/2 cup crumbled feta cheese
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup olive oil
Instructions:
- Grate the zucchini on the wide holes of a grater or in a food processor.
- Place the grated zucchini in a large colander and sprinkle with salt. Let drain for 10 minutes.
- Squeeze the zucchini to remove as much water as possible.
- In a large bowl, combine the zucchini, onion, parsley, mint, feta cheese, flour, baking powder, salt, and pepper.
- Add the olive oil and mix until well combined.
- Heat a large skillet over medium heat. Drop the zucchini mixture by spoonfuls into the hot skillet and flatten with a spatula.
- Cook for 3-4 minutes per side, or until golden brown and crispy.
- Serve hot with your favorite dipping sauce.
Tips:
- For the best flavor, use fresh, in-season zucchini.
- If you don't have fresh herbs, you can use dried herbs instead. Just be sure to use half the amount, as dried herbs are more concentrated.
